Life Is What You Bake It: Sensational Snickerdoodles

There are numerous cookies that are quintessential Christmas cookies (like sugar cookies, gingerbread, and candy cane cookies if you are in my family). However, there seem to be strong opinions on those cookies because of the bold flavors and icing. One cookie I love to make at Christmas (and for any occasion) is the snickerdoodle. It is a crowd pleaser since most people like cinnamon and sugar (even my chocolate cookie loving husband). We can just call it the compromise cookie!

Ingredients

  • 1 cup unsalted butter, room temperature
  • ¾ cup granulated sugar + ¼ cup granulated sugar for topping
  • ½ cup light brown sugar
  • 1 egg
  • 1 egg yolk
  • 1 tablespoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon + 1 tablespoon ground cinnamon for topping
  • 2 ¾ cups flour

Directions

  1. Preheat oven to 325 degrees.
  2. Line a baking sheet with parchment paper.
  3. In the bowl of a stand mixer (paddle attachment), mix the butter, white sugar (except topping sugar), and brown sugar for 3 minutes on medium speed.
  4. Add in the egg, egg yolk, vanilla, baking soda, cream of tartar, salt, and cinnamon (except topping cinnamon). Mix for 1 minute on medium speed.
  5. Turn the mixer on low and slowly add in the flour until combined.  
  6. Mix topping sugar and cinnamon in a bowl until thoroughly combined. Pour the mixture onto a plate.
  7. Roll the cookie dough into balls, then roll the balls in the cinnamon sugar mixture.
  8. Bake for 10-12 minutes. Let cool for 3 minutes and then transfer to a cooling rack.
  9. ENJOY!

PS Confession: We LOVE to add a little cinnamon on top of our chocolate chip cookies…so we added mini chocolate chips to about 6 cookies and they were delicious!
