Reimagining A Popular Favorite: Meatless Meatball Monday

My husband and I have loved impossible burger since before it was available to the public. We were HOOKED after we tried it in a restaurant for the first time. We have a friend who used to work in catering, and she used her food supplier connections so we could buy some. Luckily, you can buy it at several grocery stores now AND directly from their website. Meat replacements are not the best way to lead a vegetarian lifestyle, but sometimes you just need to recreate an old favorite. Impossible burger is SO good in tacos, chili, soups, burgers-you name it.

We recently used it to make meatballs and they were so easy and flavorful. Impossible burger has the perfect texture for this recipe. These meatballs would add depth to spice up spaghetti, but we used them to make meatball subs for some Saturday “junk food” and let’s just say we’ll be doing that again…

These meatless meatballs are not vegan, but you could easily swap out the egg for a flax egg if you want them to be fully plant based (just make sure that your bread crumbs are vegan). This egg replacement works really well in a recipe like this. To make the substitute, mix 1 tablespoon flax meal and 2-2.5 tablespoons water in a small bowl. Stir and let it rest and thicken for about 5 minutes.

Ingredients

  • 1 egg (or flax egg)
  • 2 teaspoons Italian seasoning
  • 1 teaspoon basil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • Pinch of black pepper
  • 1 package (12 oz.) ground impossible burger
  • ¼ cup bread crumbs (regular or panko, gluten free or regular)

Directions

  1. Preheat your oven to 375 degrees. Spray a baking dish with nonstick spray or line a jelly roll pan with parchment paper.
  2. Mix egg, Italian seasoning, basil, salt, garlic powder, and pepper in a bowl.
  3. Add impossible burger and bread crumbs to the egg mixture and mix thoroughly.
  4. Shape the mixture into approximately 15 meatballs.
  5. Place the meatballs in a baking dish or on a pan about 1.5 inches apart.
  6. Bake in the oven for approximately 5 minutes, turn the meatballs over and bake for an additional 5-7 minutes.
  7. ENJOY with your favorite sauce or entrée!
